Soybean processing as a Domestic industry यदि हम सोयाबीन में पाये जाने वाले पोषक तत्वों व खनिज लवण व विटामिन्स का विश्लेषण करें तो प्रति 100 ग्राम सोयाबीन में निम्नानुसार मात्रा पाई जाती है- Nutritive Value of Soyabean (per 100 gram) Water 8.5 g Potassium, K 1797 mg Energy 416 kcal Sodium, Na 2 mg Energy 1741 kJ Zinc, Zn 4.9 mg Protein 36.5 g Copper, Cu 1.7 mg Fat (total lipid) 19.9 g Maganese, Mn 2.52 mg Fatty acids, saturated 2.9 g Selenium, Se 17.8 mg Fatty acids, mono- unsaturated 4.4 g Vitamin C (Ascorbic acid) 6 mg Fatty acids, poly-unsaturated 11.3 g Thaimin ( Vitamin B1) 0.87 mg Carbohydrates 30.2 g Riboflavin (Vitamin B2) 0.87 mg Fiber 9.3 g Niacin ( Vitamin B3) 1.62 mg Ash 4.9 g Panthotanic acid (Vitamin B5) 0.79 mg Isoflavones 200 mg Vitamin B6 0.36 mg Calcium, Ca 277 mg Folic Acid 375 µg Iron Fe 15.7 mg Vitamin B12 0 µg Magnesium 280 mg Vitamin A 2.0 µg Phosphorus, P 704 mg Vitamin E 1.95 mg  प्रोटीन की उपलब्धता को देखते हुये इसका हमारे दैनिक जीवन में पोषक आहार में विशेष योगदान है सोयाबीन का औषधीय महत्त्व सोयाबीन में उपस्थित प्रोटीन व आहरिक रेशे पाये जाने के कारण इससे रक्त में ग्लूकोज की मात्रा कम होती है जिससे खून की कमी होने से रोकता है तथा सोयाबीन में आयरन की मात्रा...

Barley is one of the world’s most important cereal crops after wheat, maize, and rice. It occupies fourth rank in the world. Barley was mainly cultivated and used for human food supply in ancient times but now-a-days it is significantly grown for animal feed and malt products. Barley is predominantly consumed as food crop in the semi-arid regions of Africa (Morocco, Algeria, Libya and Tunisia), Middle East (Saudi Arabia, Iran, Iraq and Syria), highlands of Nepal, Ethiopia and Tibet, Andean countries of South America (Peru and Chile) and in some Asian counties (China, North Korea and Himalaya). In India, it is staple food of the northern hills people and also used for food and feed purposes in other plain parts of the country as Rajasthan, Punjab, Haryana, Uttar Pradesh, Bihar and Madhya Pradesh. Among cereals, barley is most preferred for malt, as its husk protecting the coleoptiles (acrospire) during germination process and provides aid in filtration, firm texture of grains and its amylases activity makes it unique for malt recovery. In context of the nutritional values barley grains have higher soluble dietary fibre and lower low density lipoprotein (LDL) content than that of wheat. Soluble fibre has a cholesterol lowering property and LDL cholesterol is the fraction associated with increased risk...
