Protein and Mineral-Rich Cashew Sprout-Based Functional Snack: Cashew Sprout Healthy Bites

Cashew kernels are widely recognized for their high nutritional value, providing protein, healthy fats, minerals and bioactive compounds. However, like many plant-based foods, they also contain antinutritional factors such as phytic acid, which can bind minerals and reduce their bioavailability. In some individuals, these compounds may also contribute to gastrointestinal discomfort. Sprouting offers a natural processing approach to address these limitations while enhancing the nutritional and functional attributes of cashew kernels.

Cashew sprouts are obtained through the controlled hydration and germination of cashew kernels, during which the dormant seed becomes metabolically active. Germination activates endogenous enzymes, particularly hydrolytic enzymes, which initiate the breakdown and transformation of storage components. This biochemical activity can improve protein digestibility and nutrient accessibility, while also contributing to changes in the amino acid profile and the bioaccessibility of essential minerals. Importantly, sprouting promotes the degradation of phytic acid, thereby potentially improving the utilization of minerals such as iron and calcium. The germination process also stimulates the formation and release of several bioactive compounds, particularly phenolic compounds and other antioxidant constituents. Consequently, sprouting can enhance the functional and nutraceutical potential of cashew kernels beyond their conventional nutritional value. This makes cashew sprouts particularly relevant to the growing market for plant-based, nutrient-dense and minimally processed functional foods.

To translate the nutritional advantages of sprouted cashew into a convenient food format, Cashew Sprout Healthy Bites have been developed. The product combines the nutritional goodness of cashew sprouts and cashew nut butter in a compact, ready-to-eat format. Such products are particularly attractive for consumers seeking convenient nutrient-rich snacks and can potentially serve different age groups as part of a balanced diet.

The developed Cashew Sprout Healthy Bites contain approximately 9.7% protein, 8.6 mg iron, 85.88 mg calcium and 7.93% dietary fibre. The product is formulated without added sugar and is completely vegan, making it suitable for consumers seeking plant-based alternatives. It also contains 14.22% moisture and 2.13% ash, while the total phenolic content is approximately 224.74 mg/100 g, accompanied by antioxidant activity of 14.55 µmol/g. The presence of protein, dietary fibre, minerals and antioxidant compounds contributes to its potential as a nutritionally enriched snack.

The processing technology requires only moderate capital investment, making it suitable for micro, small, and medium-scale food processing enterprises, self-help groups, and rural entrepreneurs. The initial investment primarily includes equipment for sprouting, drying, grinding, mixing, shaping, packaging, and storage. Since most of these units are small-scale and energy-efficient, the fixed investment remains relatively low. Operational costs mainly comprise raw materials, labour, packaging materials, utilities, and transportation. Economic analysis indicates that the production of Cashew Sprout Bite is highly profitable.
